Fidesse®: a new functional ingredient for meat substitutes
Consumers are more often opting for plant-based alternatives like meat substitutes. Fidesse®, a new innovative and functional ingredient for meat substitutes, provides just the right texture and juiciness and has a neutral taste and colour. Cosun Beet Company is introducing the ingredient next week during Food Ingredients Europe trade fair in Paris. The only raw material in this 100% plant-based product is Dutch sugar beet pulp.
Sugar beet pulp is a side product of sugar production by Cosun Beet Company. Unique technology is used to gently process this pulp into a food ingredient that gives texture and juiciness to plant-based food like meat substitutes. Since Fidesse® has a neutral taste and colour, it can be used in a wide range of products.
Healthy and locally grown
The only raw material in Fidesse® is sugar beet pulp derived from locally grown sugar beets, giving the product a low footprint, especially compared to other texturisers often used in meat alternatives. Since it is 100% plant-based, it can be consumed by both vegetarians and vegans. Fidesse® is also rich in fibre and contains very little fat.
Sustainable future
The introduction of Fidesse® aligns with Cosun Beet Company’s strategy to utilise all the components of the sugar beet, explains CEO Paul Mesters. “Our company develops plant-based solutions for a sustainable and climate-friendly future. We have no waste: we optimally utilise all side streams of our sugar production. For example, sugar beet pulp is already used in paper and as a raw material for biobased ingredients for cosmetics. I am proud that it can now also form the basis for a plant-based ingredient for meat substitutes.”
