Discover the power of beet fibre

In a world where sustainability and health are increasingly in focus, Cosun Beet Company - a leading sugar producer - offers an innovative ingredient that brings both together: Fidesse®. Fidesse is an upcycled food fibre derived from sugar beet pulp, a valuable side stream of sugar production. This textured fibre has a high moisture content, adding bite and juiciness to a wide range of products.

Maximizing sugar beet fiber

Fidesse is a natural sugar beet fibre that fits seamlessly into the development of plant-based and hybrid food products. Thanks to its unique properties, Fidesse delivers a juicy bite, neutral flavor, colour and aroma, and a firm texture. The fibre is sourced from the pulp that remains after sugar is extracted from sugar beet.

This pulp undergoes minimal processing and is then individually quick frozen (IQF), preserving its natural structure. The fibre retains water exceptionally well and gradually releases it during consumption, resulting in a juicy mouthfeel and pleasant bite.

Versatile solutions from beet pulp

Fidesse is highly versatile and well-suited to a broad spectrum of applications within the food industry. It is ideal for hybrid products, where part of the meat or fish is replaced with sugar beet fibre, as well as for fully plant-based meat and fish alternatives.

Fidesse also enhances the texture and juiciness of finger foods such as snacks and appetisers. In spreads, it contributes to a smooth texture and balanced mouthfeel. Additionally, it is suitable for use in co-extrusion, making it a valuable ingredient in innovative food concepts.

Sustainable, healthy and from our own supply chain

As Cosun Beet Company is a cooperative, we manage the entire supply chain ourselves, resulting in a low environmental footprint. Fidesse contains hardly any calories, fat, or sugars, but is rich in dietary fibre – perfectly aligned with a healthy diet. It is not only a sustainable alternative to conventional texturates (such as TVP) but also supports the protein transition and a more conscious lifestyle.

Curious how Fidesse can enrich your product?
